A Legacy Of Tradition

Sakana was born from the vision of Hiroshi (ひろし / 宏) a passionate head chef who moved from Japan to Australia over 30 years ago. With a deep respect for traditional Japanese culinary arts, he set out to share the authentic flavors of his homeland using only the freshest local ingredients. What began as a humble eatery has grown into a beloved destination for sushi and ramen lovers, blending timeless techniques with a modern dining experience.

1990 - A New Beginning in Sydney

Hiroshi arrives in Sydney from Japan with a dream to share the authentic taste of his homeland. That same year, he opens the first Sakana—a humble restaurant dedicated to traditional sushi and ramen, crafted with care and the freshest local ingredients.

1995 - Gaining a Loyal Following

Word spreads quickly. Sakana earns a reputation for its warm hospitality, handcrafted dishes, and unwavering dedication to quality. Hiroshi’s cooking becomes a staple in the local community.

2000 - Mastering the Craft

Hiroshi continues refining his menu, drawing inspiration from seasonal ingredients and traditional Japanese techniques. His commitment to excellence keeps diners coming back year after year.

2005 - A Beloved Icon in Sydney

By now, Sakana is more than just a restaurant—it’s a beloved local institution. Families, foodies, and tourists alike come to experience the genuine flavors of Japan.

2015 - Second Location Opens in Melbourne

Building on decades of success, Hiroshi opens a second Sakana in Melbourne. The new location carries the same spirit and attention to detail, expanding his legacy to a new audience.

2025 - 35 Years of Sakana

With two thriving locations and a legacy built on tradition, Sakana continues to serve handcrafted Japanese cuisine with heart, honoring Hiroshi’s vision from the very beginning.
